Typical Lunch

Here's a look at our typical lunch: Salad!
Today we just used romaine, but normally we mix both romaine and spinach. Today's salad included black beans, hummus, salsa, chopped dates, and mixed nuts. Simple. Easy. Tasty.

Hummus Deal

We usually buy hummus at Sam's club, because it's cheaper than anywhere else. But this week, Bi-lo ran a great sale on Tribe Natural Hummus - so we stocked up! Hummus freezes well, so anytime there's a sale - we'll pick up extra. I normally get 25 ounces at Sam's for $5.86 and today I got 33 ounces for $2.99 (on sale for 3/$3.99 plus a $1.00 off coupon). Grilled Portabella Mushrooms
Arnold Whole Wheat, Flax & Fiber Rolls
Spinach
Onions
Hummus
Avocado

These were AMAZING - seriously AMAZING. Josh made dinner Saturday night since I was gone all day taking a CWP course (which I passed with a perfect score!). There is nothing better after a long day than coming home to an amazing dinner cooked by your husband!

Twas the night before grocery shopping...



Thursday dinner was definitely thrown together, since we were low of groceries. Whole wheat pitas with hummus and romaine, sweet potato, and summer squash w/salsa. Not much work at all and fairly good - a little too much starch for one meal, but like I said - we needed to shop :)

Asian Veggies and Couscous


We enjoyed a multi-cultural dinner tonight of Asian Veggies and Couscous - Delicious! Veggies from Sam's (See previous entry - bag for $6.98 and we eat 1/2 of the bag for 1 dinner). Couscous from a local organic farmer (Paid $3.06 for the bag, only used 1/3 tonight). That equals dinner for $4.51 for 2 people...or $2.26 a person. YOU TELL ME IT'S EXPENSIVE TO EAT HEALTHY! Btw - this was Josh's plate :) I actually have leftovers from mine for lunch tomorrow....which lowers the price even more! I had dinner tonight and lunch tomorrow for $2.26 - and it's YUMMY.

I hope these entries give you some ideas for cheap, healthy meals! It's so much fun and not that time-consuming to find healthy, nutritious meals that focus on giving your body the nutrients it craves.
